This wine is made with Garnacha, Tempranillo, Graciano and Mazuelo grapes from our own vineyards. It is aged for 18 months in American and French oak barrels and then bottled and left to continue maturing, a process that lasts until the wine goes on sale. In order to ensure that the wine evolves well over time it is very important that it is “alive” when it enters the bottle: It will have a longer life and the reactions between its various components obtained in the grape production, winemaking and ageing processes will produce a fine, elegant, balanced, powerful wine with a long future ahead of it, in which it can be enjoyed at any time. Fermentation occurs at a controlled temperature and is encouraged by several vigorous pump-overs and rack-and-returns, all of which help us to achieve aromatic sensations and a strong level of colour.We recommend that it be served at a temperature of 17 or 18 º C. Once opened, it should be allowed to breathe to improve its qualities.It is best combined with grilled or barbecued red meats; dishes based on duck, and also with meat or bean stews. Very good with strong or aged cheeses.
